Apple “Knödel”

Serve the deep-fried dumplings with poppy-seed mousse, raspberries, apple chips and wafers. Ingredients:
• 1 tbs. butter
• 50 g grated almonds
• 50 g breadcrumbs
• 1/2 sachet vanilla sugar
• 1 knife tip of ground
• cinnamon
• 1 tbs. rum
• 1 knife tip grated lemon
• peel
• 1/2 tbs. lemon juice
• 1 egg yolk
• 1 egg white
• 1 tbs. to taste,
• depending on sweetness of apples
